The Detox Kitchen has given us the perfect guilt-free recipe just in time for Pancake Day! Not that we should feel guilty for indulging, but how could you resist something so good, that’s also dairy free, gluten free, and refined sugar free?!
This recipe is so easy and requires almost no prep so even if your Shrove Tuesday is off to a busy start, it’s still doable. Here’s the recipe:
For the batter
1 banana
2 eggs
1 tbsp honey
2 tbsp self-raising gluten free flour
For the chocolate sauce
1 tbsp coconut oil
1 tbsp honey
1 tbsp cacao powder

1 banana
Sprinkling of Qnola
Start by mashing the banana in a large bowl, then add the eggs and honey and mix well with a fork. Add the flour, and let the batter rest for five minutes.
Heat a little bit of oil in a frying pan and using a ladle, scoop up the mixture and pour in the pan. Wait until the bottom is perfectly golden then flip and repeat.For the chocolate sauce, put the honey and coconut oil in another pan on low heat. Once the coconut oil is melted, add cocoa powder and whisk until everything is combined well.Finally, slice up the rest of the banana for the topping and drizzle a spoonful of chocolate. The Detox Kitchen advises to also top with honey and Qnola, a protein and fibre-filled cross between granola and quinoa, for the perfect amount of crunch. Personally I think blueberries would be a great addition!
