
We love Easter, and are more than happy to indulge in a little sweetness, but what could be better than to know you’re giving your body a bit of a protein boost in the process? Win, win right? Luckily for us sister lifestyle bloggers Teddy and Alex of TeddyandAlex.com have used WheyHey ice cream to put together some indulgent and nutritious little creations for Easter, and here they are!
Clean apple crumble and vanilla Wheyhey ice cream…

Ingredients:
Wheyhey Vanilla Ice Cream
2 large bramley apples
1-2 tbs xylitol/stevia
1 tbs of water
Squeeze of lemon juice
Cinamon (optional)
Crumble:
2 tbs coconut flour
1 tbs porridge/oats
1 tbs of coconut oil (I use it straight from the fridge which gives it the same
consistency as butter)
Method:
Preheat oven to 175 celsius.
Peel apples and chop them up in small pieces. Place the apples in a pot with a tiny squeeze of lemon juice to help keep their color and a dash of cinnamon and the stevia/xylitol.
Cook apples until they are almost broken down.
Place all ingredients for the crumble in a bowl and rub together with fingertips until a crumb like texture is achieved.
Place apples in a few jam jars or a small tin and cover with the crumble mix. Place them in the oven for about 10 – 15 minutes until the crumble is crisp and a golden colour.
Remove from oven and serve with Wheyhey vanilla ice cream.
*Make sure not to overfill the jars as it bubbles and pushes all the crumb mixture out so leave about an inch space at the top.
Clean eating peanut butter cookie ice cream sandwich…

Ingredients:
1 280g jar of Natural peanut butter
2 eggs
3 tbs stevia (or more depending on taste)
1 tbs of Vanilla Essence
Any flavor WheyHey ice-cream
Method:
Preheat oven to 175 C.
Mix all of the ingredients together in a bowl, it might look too runny but if you keep mixing you will get a cookie dough consistency.
Get some cookie dough into your hands and roll into a ball. Repeat this until all dough is rolled up.
Place the rolled balls on parchment paper or a non stick cookie pan.
With a fork press down slightly on the cookie ball horizontally and vertically to create a flatter shape.
Place in the oven for 12 – 14 minutes depending on size.
When finished take them out and let them cool on a wire rack.
Get a spoonful of WheyHey ice-cream and place it on a cookie, sandwich it with another cookie on top.
You can also package them in some cling film and store in a freezer if you want them at a later stage.
