Who says Pancake Day has to be one day a year, with the amount of baking and cooking at home we are doing I started to look back at some of our favourite foodie posts for some recipe info. Pancakes are always a good idea!
Fitness and health expert Zanna Van Dijk has a number of pancake recipes on her website and in her cookbook, “Strong,” that take the guilt away and make our mouths water just the same. Zanna has lots of health and fitness inspo tips on her site.

One of the many recipes that makes my mouth water: Vanilla Coconut Pancakes, which Van Dijk describes as light, fluffy and delicious…yes please! Here’s the recipe:
Combine in a blender:
1 scoop vanilla whey protein,
1/3 cup oat flour,
1 tsp baking powder,
1 egg white,
1/4 cup plain Greek yoghurt,
1.5 tbsp desiccated coconut,
1-2 tbsp almond milk.
Once the ingredients are thoroughly mixed together plop a couple of tablespoons of the mixture into a medium/high heat non-stick pan. Flip once bubbles appear on the surface. Stack them up and enjoy!

Another recipe that looks too good to be healthy: Chocolate Oat Pancakes (yes, I said chocolate!)
Ingredients:
- ¼ cup oat flour
- 2 tbsp cocoa powder
- 1 egg white
- 4 tbsp greek yoghurt
- A pinch of baking powder
- 1-2 tbsp milk (I recommend unsweetened almond milk)
All you have to do is mix together all the ingredients until they are thoroughly combined. Heat up some oil in a pan to a medium temperature (Van Dijk recommends coconut oil) and pour in your pancake mixture. Flip when bubbles appear on the surface.

We love Van Dijk’s recipes because most of the unhealthy ingredients have been substituted with healthier options, for example, egg whites and Greek yoghurt instead of whole eggs and cream or butter.
