News flash. This year the UK and Mexico are joining forces to celebrate each other’s culture, food, tourism, education and more. Sweet right?
To kick off the celebrations in London, the Southbank is hosting the Pop-Up Mexican Exhibition. The event opens on the 25th February and will not only focus on the amazing food of Mexico (which, by the way is the only cuisine chosen by UNESCO as of Intangible Heritage of Humanity), but also their colourful innovation and culture.
Whilst we can’t get enough of guacamole and the odd Tequila shot, it’s time for a different take on Mexico. Think waterfalls, think the incredible architecture of Mexico City, think the history and stories behind the country.
Our favourite Mexican eating spot Wahaca is on board with the event too, and will be on site with their food truck to cater to visitors. If you’ve ever visited a Wahaca restaurant, you’ll know it’s THE place to go to experience some of the more out-there street food Mexico has to offer. Be adventurous next time you pop in, ditch the burrito for some of the secret marinades and healthy salads.
The exhibition is set to use 3D experiences and state-of-the-art technology inside the pop-up pavilion, to make you feel like you’re in the country itself. Who could say no to that?
The ‘Vochol’ will also be on-site. You don’t know what the ‘Vochol’ is?! Only a Volkswagon Beetle with over 2 million beads on it, one of the most unique art pieces in the world that took 8 people over 9000 hours to finish.

The event will run ’til the 11th of March so don’t miss out, it’s free so there are no excuses. If you can’t make it down to London the exhibition will be travelling to Manchester, Liverpool and Edinburgh later in the year.
