Psst. We have an expert pancake maker in the office. And it just so happens she’s our Editor! Krista has been perfecting her essential free-from pancake recipe and it’s ready to be shared! You’re welcome. It’s always best to start your day with a low-sugar protein kick, and these pancakes just might be the most deceptively luxurious way of doing it.
Consider this recipe a base. You can add what you like to it, depending on what you have in the fridge or cupboards! Though keep you angelic hat on when choosing, step away from the chocolate spread!
You’ll need…
1 egg
1 banana
1 dash of cinnamon
1 crystal of Himalayan Pink Salt
Coconut oil
1 handful of your favourite berries
Maple syrup or agave syrup
Whisk together then fry in a little coconut oil. Top with your favourite berries and a drizzle of maple syrup or agave. This recipe will make 1 large pancake fried in a small omlette pan, or two scotch sized pancakes.
Top tip/ Add gluten free steel-cut oats and a little maca root powder to the recipe if you need an energy boost!
