Fresh produce and generous splashes of olive oil reflect a cooking culture shaped by the land and local traditions for thousands of years. And, even better, you rarely need a fancy restaurant to eat well. Here are five dishes you shouldn’t miss.

Souvlaki – the classic Greek street food
Souvlaki keeps things pleasingly straightforward: cooks grill small pieces of pork or chicken on skewers, then serve them alone or tuck them into warm pitta with tomato, onion, tzatziki and sometimes chips. The smoky meat and cool yoghurt sauce make a particularly satisfying combination after a day of sightseeing.

Look for busy grill houses where locals queue, especially away from the most tourist-heavy squares. High turnover usually means meat spends less time waiting around, while an open grill lets you see your lunch cooking. Souvlaki also makes an affordable option when your budget has suffered from too many seaside cocktails.

Moussaka – layers of comfort
Moussaka brings together aubergine, minced meat and a creamy béchamel topping, although recipes change between kitchens and regions. Some cooks add potato or courgette, while family recipes often have their own balance of cinnamon and other spices.

On summer Greece holidays, pair a salad with grilled fish, souvlaki or a few shared meze dishes for a lighter meal when the midday heat makes heavy food less appealing.

Spanakopita – crisp pastry with a savoury centre
Spanakopita wraps spinach, herbs and typically feta inside layers of flaky filo pastry. You get crisp edges followed by a soft, salty filling, making it easy to understand why Greeks eat savoury pies as snacks as well as part of larger meals.

Try a neighbourhood bakery in the morning, when freshly baked trays often appear on the counter. Small bakeries and family-run tavernas may also offer versions with handmade pastry or local greens, giving you flavours that packaged pies struggle to match.

Gemista – vegetables with a homely twist
Gemista turns everyday vegetables into a proper meal. They hollow out tomatoes and peppers, fill them with rice, herbs and sometimes minced meat, then bake everything until the vegetables soften and their juices flavour the filling.

Seek out a taverna displaying cooked dishes behind a counter, as gemista often forms part of the day’s home-style selection. Meat-free versions work especially well for a relaxed lunch, while a spoonful of yoghurt or feta on the side adds a cool, tangy contrast.
