London, it’s time to get wastED…but before we scarf down three martinis, it’s actually not what you think. Selfridges London, or more specifically the rooftop at Selfridge’s, has teamed up with New York’s internationally acclaimed Blue Hill restaurants to bring attention to London’s food waste movement. Martinis or not, this is definitely something we can get behind!
wastED London, which will take place from 24 February until 2 April 2017, is headed by American Chef Dan Barber as he makes his first public cooking appearance in London. Barber is teaming up with local farmers, fishermen, suppliers and retailers to challenge what we think of as “inedible” food. Sounds interesting, we know. He is also teaming up with London chefs to create special nightly menus using ingredients such as the discarded cores of spiralised veg and water from chickpea cans.
The dishes will be complete with cocktails by Iain Griffiths (previously at Mr Lyans), and a view of the London skyline. Reservations are now open; online or call at 020 7788 6210.
