This pancake recipe has literally two ingredients… and that’s not including flour. ‘Madness’ you say? Absolutely! But we can guarantee you’ll be going crazy for these guilt-free pancakes once you try them out, and forcing everyone you know to try them too.

You may have heard about this wellness hack a while back – and we don’t blame you if you’re totally obsessed. You have good reason to. If you are yet to try this recipe out, you’ll be pleased to have discovered such a deliciously yummy and wicked guilt-free breakfast or sweet treat.

The wellness experts at Food Matters reminded us of this golden oldie recently and now we’re just going bananas for them (get it?). Go on, try it out for yourselves:

INGREDIENTS

2 eggs
1 banana, peeled, chopped roughly (not too ripe!)
coconut oil or butter for frying

DIRECTIONS

1. Whisk eggs in a bowl, add the banana and mash together to form a batter.

2. Heat 1 tablespoon of coconut oil or butter in a frying pan over medium heat. Pour in the batter to create a thin pancake. Let the pancake cook for about a minute before flipping it. Cook for another minute or two.

3. Serve with fresh strawberries and yogurt, cinnamon butter, maple syrup or sweetener of choice. You can also add nut butter, seeds (sesame, chia, hemp seed) and a drizzle of raw honey.
